Peanut Butter and Jelly French Toast

On a red table, Pinch of Nom's slimming-friendly Peanut Butter and Jelly French Toast is served for breakfast. Peanut Butter and Jelly French Toast | Slimming & Weight Watchers Friendly

You’ll jump out of bed any time this Peanut Butter and Jelly French Toast is on the menu! A slimming-friendly breakfast recipe that feels (and tastes!) like an indulgent treat, we’ve used a couple of simple swaps to cut down on calories, while keeping all of those lovely sweet and salty flavours.

Equipment

  • small bowl

Ingredients

  • 4 slices medium-thick white bread, approx. 36g each
  • 2 medium eggs, beaten
  • 2 tbsp peanut butter powder
  • tbsp water
  • 2 tbsp reduced-sugar jam (we used strawberry)
  • 4 medium strawberries, thinly sliced
  • 1 tsp icing sugar
  • low-calorie cooking spray

Instructions

  • In a small bowl combine the peanut butter powder with the water. Mix until smooth.
  • Spread the jam onto two slices of bread and top with a layer of strawberries. Spread the other two slices of bread with the peanut butter, then place peanut butter side down on top of the strawberries to make two sandwiches.
  • Add the eggs to a bowl and dip the sandwiches on both sides, allowing all the egg to be soaked up into the bread.
  • Spray a large frying pan with low-calorie cooking spray and place over a medium heat. When the frying pan is hot, transfer the sandwiches to the frying pan. You may need to cook each sandwich separately depending on the size of your pan. Fry for 2–3 minutes on each side, until golden brown and a little crisp.
  • Remove from the frying pan and dust with a little icing sugar. Cut each sandwich in half diagonally and serve!

Notes

Tip: You could swap the strawberries for raspberries.
Tip: We used strawberry jam but you can use anything you prefer!
