Equipment
- 28cm x 20cm ovenproof baking dish
Ingredients
- 40 g dried cranberries
- 1 orange, zest and juice
- 150 g self-raising flour
- 50 g oats
- 65 g white granulated sweetener
- 75 g reduced-fat spread
- ¼ tsp ground cinnamon
- 3 Bramley apples
- 2 pears
Instructions
- Preheat the oven to 160°C.
- In a small bowl combine the dried cranberries with the orange juice and leave to one side while you prepare the rest of the crumble.
- Reserve 1 tbsp of sweetener and add the rest to a mixing bowl with the flour and oats. Add the reduced-fat spread and rub into the flour between your fingertips until it looks like breadcrumbs.
- Peel the apples and remove the core. Cut into slices about the width of a £1 coin. Do the same with the pears. Add to an ovenproof dish. Pour in the orange juice and cranberries and sprinkle over the orange zest, reserved sweetener and cinnamon. Stir and spread out evenly in the dish.
- Top the fruit with the crumble mixture and roughly flatten out the surface. Pop into the oven for 35-40 minutes until the fruit is soft and the crumble has turned golden brown.
