Parmesan Potatoes | Slimming & Weight Watchers Friendly

We love cheese and we love spuds, so it’s no wonder we love these Parmesan Potatoes! Gloriously golden and crispy, it takes just a handful of ingredients and less than an hour to have them ready to serve with your next Sunday roast.

Equipment

  • Baking tray

Ingredients

  • 600 g new potatoes, sliced in half
  • 50 g Parmesan cheese, or vegetarian hard cheese, finely grated
  • 2 tsp garlic granules
  • 2 tsp onion powder
  • 2 tsp parsley
  • 1 tbsp fresh chives, finely chopped
  • salt and pepper, to taste
  • low-calorie cooking spray

Instructions

  • Preheat the oven to 180°C. Add the potatoes to a pan of cold salted water. Set on a medium heat and bring to the boil, cook for 10 minutes until just soft.
  • Drain the potatoes and add back to the pan. Spray with low-calorie cooking spray and sprinkle over the garlic granules, onion powder, dried parsley and a little salt and pepper. Toss to coat.
  • Add to the baking tray cut side down. Cook for 15 minutes.
  • Remove from the oven and sprinkle over the Parmesan cheese. Cook for a further 15 minutes.
  • Top with the chopped chives and serve.
