Parmesan Potatoes | Slimming & Weight Watchers Friendly
We love cheese and we love spuds, so it’s no wonder we love these Parmesan Potatoes! Gloriously golden and crispy, it takes just a handful of ingredients and less than an hour to have them ready to serve with your next Sunday roast.

Ingredients
- 600 g new potatoes, sliced in half
- 50 g Parmesan cheese, or vegetarian hard cheese, finely grated
- 2 tsp garlic granules
- 2 tsp onion powder
- 2 tsp parsley
- 1 tbsp fresh chives, finely chopped
- salt and pepper, to taste
- low-calorie cooking spray
Instructions
- Preheat the oven to 180°C. Add the potatoes to a pan of cold salted water. Set on a medium heat and bring to the boil, cook for 10 minutes until just soft.
- Drain the potatoes and add back to the pan. Spray with low-calorie cooking spray and sprinkle over the garlic granules, onion powder, dried parsley and a little salt and pepper. Toss to coat.
- Add to the baking tray cut side down. Cook for 15 minutes.
- Remove from the oven and sprinkle over the Parmesan cheese. Cook for a further 15 minutes.
- Top with the chopped chives and serve.
