Zesty and Tangy Chaat-Style Chicken | Slimming & Weight Watchers Friendly

Just imagine starting an Indian-inspired fakeaway night with a colourful plate of Zesty and Tangy Chaat-Style Chicken. To make sure every bite is loaded with street food inspired flavour, we've coated diced chicken pieces in a delightfully simple, slimming-friendly, lip-smacking marinade. Squeeze some lemon over everything right before serving, for even more gorgeous 'zing'!

Equipment

Ingredients

  • 400 g diced chicken
  • 1 medium onion peeled and sliced
  • 1 small red chilli deseeded and finely chopped
  • 1 tbsp garlic paste
  • 1 tbsp ginger paste
  • 1 tbsp garam masala
  • 1 tbsp chaat masala seasoning powder
  • 1 tbsp tomato puree
  • 200 g cucumber cut into 1cm dice
  • 3 salad tomatoes diced
  • 2 tbsp fresh coriander leaves stalks removed and roughly chopped
  • salt and black pepper to taste
  • 6 lemon wedges to garnish
  • low-calorie cooking spray

Instructions

  • Spray a large frying pan with low-calorie cooking spray and place over a medium heat. Add the chicken and fry for 8-10 minutes, or until golden and cooked through. There should be no signs of pinkness inside and the juices should run clear. Remove from the frying pan and set aside.
  • Add the onion, chilli, garlic paste and ginger paste to the frying pan. Stir and fry over a medium heat for about 5 minutes, until the onion is translucent but not browned.
  • Add the cooked chicken, garam masala, chaat masala seasoning powder and tomato puree, stir, and cook for 5 minutes.
  • Remove from the heat and stir in the cucumber, tomatoes and coriander leaves. Taste and season well with salt and black pepper.
  • Place on small plates and add a lemon wedge to each. Squeeze the lemon wedges over just before eating. Serve with rice and a dollop of natural yoghurt or raita (optional) or other accompaniments of your choice.

Notes

Tip: If you prefer things to be spicy, you can leave the seeds in the red chilli, and this will increase the heat.
