
Blueberry Mojito | Slimming & Weight Watchers Friendly
Inspired by a cocktail menu classic, our Blueberry Mojito recipe keeps things nice and simple. With a short list of slimming-friendly ingredients, we’ve put together the perfect tipple to refresh you on hot summer days. We’ve added lemonade to give our medley of berry, rum, lime and mint flavours an irresistible fizzy twist!

- serving glasses
Ingredients
- 120 g blueberries
- 100 ml white rum
- 600 ml diet lemonade
- 3 limes juiced
- 15 g fresh mint leaves removed from stalks
- 1 tbsp white granulated sweetener
- 1 lime thinly sliced
- ice to serve
- extra mint leaves to serve
Instructions
- Add 100g blueberries to a jug along with the lime juice, sweetener and mint leaves. Crush the blueberries slightly to help release more of their juices, and gently press the mint leaves to ‘bruise’ them – this will enhance the minty flavours too.
- Pour in the rum and lemonade and stir together.
- Add ice to the serving glasses and pour over the mojito mixture. Add the extra lime slices to the glasses along with the rest of the blueberries and a few extra mint leaves. Serve.
