Stilton Roast Potatoes | Slimming & Weight Watchers Friendly
Just when you thought crispy, golden roast potatoes couldn’t get any more delicious, we’ve tossed them with crumbled Stilton cheese and sliced spring onions. The sharp, nutty flavour of the cheese is more than a match for the freshness of the onions, so every single bite is a treat for your taste buds!

Ingredients
- 2 floury potatoes, approx. 600g peeled and cut into 5cm chunks
- 40 g Stilton cheese, crumbled
- 2 spring onions, trimmed and finely sliced
- 5 g parsley, finely chopped
- ½ tsp garlic granules
- ½ tsp onion powder
- salt and pepper, to taste
- low-calorie cooking spray
Instructions
- Preheat the oven to 200°C. Put the potatoes in a saucepan of salted cold water, bring to the boil and cook for 10 minutes, until just soft, but still holding their shape.
- Drain in a colander and leave for 5 minutes, then toss gently in the colander to fluff up the edges. Put the potatoes on a baking tray and spray with plenty of low-calorie cooking spray. Sprinkle over the garlic granules, onion powder, salt and pepper, and toss to coat. Roast for 15 minutes.
- Remove from the oven, shake and cook for a further 15 minutes until golden and crispy around the edges.
- Add the spring onions, crumble over the Stilton, and pop back into the oven for 5-10 minutes until the cheese is melted and golden. Sprinkle over the parsley and serve!

Notes
Tip: You can also cook these in an air fryer. Cook at 190°C for 15 minutes, add the Stilton and spring onions and cook for a further 5 minutes until crispy and golden brown.
